Tzatziki is a healthy Greek appetizer, usually used as a accompaniment sauce for meat or fish plates but it can also be consumed as salad with a nice loaf of bread. The main ingredient is yogurt mixed with cucumbers, garlic, olive oil, salt and sometimes also lemon juice, vinegar, dill, mint, or parsley. This is a plate that is always served cold. Step 2. Melt down the garlic with a special tool for pulping. Put the melted garlic in a mortar.

Step 3. Add the salt. Melt down with the pestle until it gets a good stir and the salt dissolves into the mixture.

Step 4. Without scrubbing the cucumber, cut it in two similar parts and then slice them horizontally.

Step 5. With a spoon (usually with a tablespoon), scrub and remove the inside part of the cucumber and remove the seeds.

Step 6. Now we take our 4 cucumber “boats” and push them through a grater. If the remains are still wet, you need to strain by squeezing them.
