Step 1. In a large pot we poor the 2 litters of milk that we have. If our milk is not pure it might needs to be strained first by using a strainer or a sieve.

Step 2. When our stove is hot enough, we place our pot with the milk and we need to stir it oftenly so it won’t make any “skin” on the top.

Step 3. Once it starts to take the first boil, we quickly remove the pot from the stove and place it on the side.

Step 4. Then we take a towel (made out of cotton preferably) and we cover the pot. The reason we do this, is for the milk to breathe instead of using the cap were the steam remains restricted in the pot.

 

 

How to make homemade dairy productsStep 5. To begin the process of the coagulation, our milk must reach exactly 45-46 degrees celsius. This can take about 40 minutes to an hour, depending on the environmental temperature.

If you do not have a cooking thermometer to use, there is another way, after 40 minutes place your finger in the milk and start counting slowly until 10. if you manage to reach 10 without getting burnt then the temperature is ok, or else if it is still hot, try again in a few minutes.

Step 6. When the temperature drops to 45-46 degrees we take some milk from the pot and put it in a small bowl. We going to use it later with the already prepared yogurt.

Step 7. Now we take the rest of the milk and we split it in our bowls that is going to coagulate. Here we can use clay or plastic bowls.

Step 8. In this step we going to take 1-2 soup spoons of the already prepared yogurt and place it in the small bowl that contains a bit of warm milk. (see step 6)

Step 9. We stir well the milk with the yogurt in our small bowl until the mixture becomes smooth and creamy.

Step 10. We divide equally now the mixture of milk and yogurt to our rest of the bowls. Be careful, if a bowl is bigger than the others then we need to put more of our mixture into that one.

Step 11. Our bowls now, need to remain covered and in a warm place for 12 hours without moving or shaking it at all. We will use a colander to cover our bowl.

Step 12. Once the bowl is covered with the colander we will also use a woolen towel to cover it . It needs to remain now in a warm environment. As higher the temperature is in the room, the more solid our Homemade Greek Yogurt, will become.

Step 13. If we have more than one bowl then we can use a big towel and cover them all together, so they can share the same temperature and enviroment.
