Refreshing Potato Salad With Yogurt Recipe

This is a salad-dish dedicated to the lovers of potatoes and healthy living.

In the original recipe we don’t add any type of meat (like chopped pieces of ham or turkey) but you can try it, if you like, as a nice alternative.

Time: 20 – 30 minutes

 

Main Ingredients for our Potato Salad with Yogurt recipe:

  • 1 kilo of fresh potatoes
  • 3 small dry onions
  • 6 soupspoons of fresh parsley

Ingredients for the Dressing:

  • 2-3 soupspoons of mayonnaise
  • 200gr of Greek strained yogurt
  • 2-3 soupspoons of vinegar
  • Salt-pepper
  • 1 tablespoon of mustard
  • 2-3 tablespoons of dill

 

Step by step instructions:

Step 1. We have first to boil the potatoes (It is recommended that you cut the potatoes in 4 pieces so they can boil faster – depending on the size, they may take 10 – 20 minutes).

Step 2. Cut the potatoes in small square, let’s say, pieces and put them in a salad bowl

Step 3. Chop the onions and add them in a second bowl along with the dill.

Step 4. Using a third bowl, we add now the mayonnaise along with the yogurt and the vinegar and mix them well.

Step 5. We can add  now the mustard together with the dill and the onions. It is also now the time to add salt and pepper before the final mixup.

Step 6. Pour the dressing on top of the potatoes and slightly mix them together for a few minutes.

 

 

Step 7 (Optional). It is highly adviced that you place the potato salad with Yogurt in the fridge for, at least, 1 – 2 hours and then it will be in the right temperature to be served!
