How it’s traditionally made


Homemade yogurt in Greece is produced by boiling milk in open containers for the evaporation of water and the sterilisation of milk to occur simultaneously.





After the first boil it needs some time to cool down until it reaches the temperature at the time of collection ( milking ).

This type has more fluids than the drained. It is made from skimmed or semi-skimmed, fresh or concentrated milk.

In Greece there are many skimmed greek yogurt varieties available with high fat concentration in surface, produced by traditional dairy units and distributed in plastic or clay pots.

The ancient history of Greek Yogurt
